Chicken Fried Cauliflower Rice
Today is the first day of our 30 day "Lose One, Gain One" nutrition challenge! I am so excited for the group accountability, and as promised, will be posting a new recipe each day of the challenge. We all have different things we are trying to eliminate or start eating, so the recipes I post will be grain free, gluten free and will use whole, real food. Some may contain dairy or trace sugar (such as honey or maple syrup) but I will provide substitutes as well.
We love trying new recipes in our house, but need ideas that don't take much time to prepare (cooking is not a passion). Finding options that are nutritious, tasty and appeal to all members of our household can be a challenge. Chris and I are trying to dial in our macros (more on this subject later) while our girls are on board for anything as long as it tastes good.
The crockpot is our usual "go to" for most recipes, but Closet Cooking's Chicken Fried Cauliflower Rice is easy enough to make on the stove (I use a wok) and only takes about 30 minutes to prepare, cook and serve! Riced cauliflower can be made from scratch or you can buy it already prepared in bags from Trader Joe's or Costco to make prep time even faster. Each serving is packed with 26g of protein, 13.9g of carbohydrates and 10.5g of fat and tastes amazing! Give this a try and let us know what you think!
