In yesterday's post we mentioned the upcoming MacroEd Challenge that will start on April 3rd (use the coupon code "bainbridge island" for a $25 discount). If you are looking to make a positive change in nutrition, we highly recommend you give this 8-week challenge a shot. You will learn A LOT and there will be tons of support and many yummy, easy to prep recipes to try (many of which can be prepared in a Crockpot or Instant pot).
Last night we made a few of our family favorites: Turkey meatloaf (see recipe below) and cheesy cauliflower breadsticks. They're nutritious and delicious!
Paleo meat loaf
1 teaspoon olive oil
2 slices bacon, chopped
1 medium red onion, chopped
1 green bell pepper, chopped
1 teaspoon crushed garlic
3/4 cup almond meal
1/2 cup coconut milk
1.5 pounds ground turkey, chicken or beef
1 and 1/4 cups chili sauce (we use Sriracha)
Preheat oven to 350 degrees. In a large skillet, heat olive oil over medium-high. Cook bacon, stirring, until almost crisp (about 4 minutes). Ad onion and bell pepper, season to taste with salt and pepper, and cook until vegetables are soft (about 3 minutes). Add garlic and cook 1 minute. Transfer mixture to a large bowl and add almond meal and coconut milk. Let cool.
Add raw ground meat and 2 tablespoons chili sauce to the bowl. Dive right in with those hands and mix it up! Transfer mixture to a 5"x9" loaf pan and smooth top. Spread remaining chili sauce over the top. Bake until meatloaf is cooked through, about 70 minutes. Let cool in pan 20 minutes before slicing. Enjoy!
